This a special Paleo Meal that Teah put together, beautiful and delicious chicken tacos with butter lettuce. This was an amazing dish. The chicken used was previously a whole chicken that had been boiled to make some great stock. We used it for a soup, several days earlier, when I wasn’t feeling so well. I’m feeling much better now and I wanted to share this great Paleo meal with everyone.
The chicken was sautéed in a spicy taco mix with a little bit of olive oil, no sugar.
We made a fresh cherry tomato salsa:
- cherry tomatoes cut up in quarters
- one sweet onion chopped up
- a little bit of garlic
- one grilled jalapeno, seeded and diced up
- add a few spices of your choice
- a little bit of Sea salt and pepper
Serve on plates, with several leaves of butter lettuce on bottom, spoon the chicken onto the lettuce, then the salsa, and then top with a little bit of Kerrygold sharp cheddar cheese, along with some chopped avocado (which I added olive oil a little bit of the sea salt and pepper too). Garnish with some cilantro.
By the way, this is a great Mexican feast without the corn tortilla which eliminates a significant amount of the carbohydrates. Great protein and the good fats. Remember, the saturated fats are the good stuff.
