Salmon is a favorite of mine and wild caught salmon is the best kind to use for any recipe. This is a beautiful Paleo meal of wild caught salmon and sautéed asparagus. I hope you enjoy this as much as I did! ~Dr. Rob Kiltz
Salmon and Asparagus:
Serves 3-4. Cook time 8-10 mins.
- 1lb Wild Caught Salmon Fillet
- 2 bunches of asparagus
- 1/4 cup of finely chopped sweet onions
- Kerrygold butter
- olive oil
- coconut oil
- spicy mix
Rinse salmon under cold water, pat dry with a paper towel, and cut into 4 equal-sized portions. Preheat pan for the salmon to medium-high heat. Add coconut oil, little bit of butter, and salmon. Sprinkle spicy mix. Grill salmon 4 minutes on each side over medium-high heat.
Chop asparagus stalks into 1/4’s. Heat separate pan to medium-high heat. Add butter, olive oil and onions, cook for several minutes then add asparagus and cook until tender.
All items can be prepped and then cooked at the same time for a quick and easy meal.
