Creamy dairyless seed beverage

This is a refreshing snack or morning drink. It’s filling because it’s packed with protein, B-complex vitamins, minerals and good fats*. The pulp gives it a nuance of melon flavor and color. Mother nature
grows the flesh to protect the seeds, so to throw them away is like tossing out the baby and keeping the bathwater!
Melon Seed Milk
Yields one 10 to 12 oz. glass
Seeds and pulp of one melon
1 c. pure water
1/4 to 1/2 tsp. vanilla glycerite** (optional)
Combine in the blender and blend until seeds are well ground and liquid appears milky. Strain out hulls by pouring the milk through a fine nylon mesh or stainless steel sieve. Pour a little more water through the seed hulls and pulp to extract more nutrients. Serve as is, or add your favorite extract and/or spice. I prefer
not to sweeten this, it has a lovely delicate flavor and is mildly sweet already.
*Nutrients in the seeds are comparable to those in pumpkin and squash seeds.
**Alcohol-free extract.
Scoop seeds
and pulp

to make a cream.
Pour cream
through
a fine mesh
strainer
to remove
seed hulls.
Use a wooden pestle
to move liquid
through hulls faster.
